I justhave to share this amazing recipe! I love pumpkin bars, but I honestly have never made them…until I got this easy recipe from my friend Jeanie, who got it from our friend Dawn. These are the best pumpkin bars I have ever tasted, and my family agrees! We have made two pans full in the last week! 🙂 This recipe is so easy! Also, I don’t make my own cream cheese frosting…I use Betty Crocker’s Whipped Cream Cheese Frosting. It’s amazing! (Plus, Bill has a lot to do with Betty Crocker’s frosting, so we make sure we keep him in business!) Enjoy!
Yummiest Pumpkin Bars
Yummy Pumpkin Bars
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
2 c. sugar
4 eggs
2 c. pumpkin
1 c. oil
frosting (if you want to make your own):
3 oz. cream cheese
3/4 stick oleo or butter
1 tsp. milk
1 tsp. vanilla
3/4 to 1 c. powdered sugar
Combine all ingredients. Pour into a greased jelly roll pan (11-1/2 x 15-1/2). Bake at 350 for 30-35 minutes. Frosting: Mix ingredients and spread over cooled bars.
