The weather has taken a turn here this week, and it sure feels like fall! One thing I enjoy in the fall is making warm meals for my family, and my family tends to love different kinds of soup in the fall and winter. I found this soup recipe last winter, and it has become my all-time favorite soup! My children don’t care for it as much as I do, as one of the ingredients is spinach. (I love spinach!)
After coming home from my nephew’s football game last evening, nothing sounded better to me than making and enjoying my favorite soup! It’s quick and simple to make (takes about 30 minutes total) and it’s pretty healthy too! I thought I’d share it with you so you can enjoy it too!
Spinach Tortellini Soup
3/4 c. chopped onion
1 t. minced garlic
1 T. olive oil
2 cans (14-1/2 ounces each) chicken broth
2 c. water
1 t. sugar
1/4 t. salt
1/4 t. pepper
1 package (9 oz.) refrigerated cheese tortellini
1 can (14-1/2 oz.) diced tomatoes, undrained
1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
3 T. shredded Parmesan cheese
In a large saucepan, saute onion and garlic in oil until tender. Add the broth, water, sugar, salt and pepper.
Bring to a boil. Add tortellini; cook for 5-8 minutes or until tender, stirring occasionally. Reduce heat. Stir in tomatoes and spinach; heat through. Just before serving, sprinkle with Parmesan cheese. Yield: 6 servings (about 2 qts).
